Egg salad sandwiches take me back to my childhood. As a kid there is nothing better than my dyed Easter eggs turned into egg salad sandwiches. I’d pick and choose which eggs my mom could crack for sandwiches though and save all my favorite eggs.
Ingredients:
One dozen hard boiled eggs, chopped
1/2 cup mayo
2 tablespoons paprika
1/4 cup mustard
1 tsp salt
pepper to taste
wheat bread
Directions:
Mix all ingredients together. I suggest adding a little salt at a time to test it for taste. I then toasted my favorite wheat bread from Trader Joe’s and served it with some homemade kale chips.
