Healthy Recipe: Zucchini Pizza Sticks

I always love a BBQ that has healthy meal options. And because this isn’t always a reality, I like to bring my own. Healthy can be delicious so I’m always on the hunt for yummy recipes that you won’t feel cheated on. This one is AWESOME you guys. It makes for a great 4th of July appetizer or side dish.

Zucchini Pizza Sticks

Ingredients:
one zucchini
1/2 tomato (I used a Roma but Heirlooms would be delicious too)
1 tsp olive oil
1 tbsp garlic powder
1/2 c low fat mozzarella cheese
salt and pepper
basil for garnish
Directions: 
1. Preheat oven to 375 degrees.
2. Slice each zucchini in half. I sliced off a thin layer from the bottom to keep them stable while baking.
3. Brush with olive oil. Sprinkle garlic powder, salt & pepper, cheese. Layer with diced tomatoes.
4. Bake at 375 degrees for 20 minutes.
5. Garnish with basil.
Enjoy.
**Recipe is for 2 sticks. Multiply for more servings**

    This pizzas are amazing. I have never imagined to use zucchini like that. It is amazing how you did it. I will do them today for my big family and it is nice to amaze them. Thank you!
