A Fall Treat with Ginny Of Chasing Sunshine

I am excited to have the ever so amazing Ginny taking over this space today.
Her blog is in my daily must reads…I love following her journey.
Take it away my friend…
…..
Hello LeeLaLa readers! I am Ginny from Chasing Sunshine, a little blog where I create, share delicious food and write about my little family. I am SO happy that Lindsay asked me to stop by today to share this yummy fall recipe with y’all. She is the best and I just adore her little space that she has going on here.
These Pumpkin Turnovers are not only simple, but are sure to impress any guests you have over during the holidays. Oh and not to mention that they taste pretty good too.
What you need
For the pastry: one 15 oz can of pumpkin puree, 2 tbs of cream cheese, 1/3 cup brown sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger, 1 tsp vanilla, 1-2 packages of puff pastry
For the topping: 1 egg, 1/2 cup chopped pecans, 1/4 cup brown sugar
For the glaze: 3 tbs of cream cheese, 4 tsp powdered sugar, 1 tsp vanilla, 2-4 tsp water (depending on consistency)
Step One: preheat oven to 400 degrees and thaw puff pastry. In a bowl mix pumpkin, cream cheese, brown sugar, cinnamon, nutmeg, ginger and vanilla.
Once the puff pastry is thawed cut each piece into 4 pieces so that one package makes 8 turnovers. Fill each turnover with the prepared filling, fold over and press the edges together to close.

Step Two: mix together the pecans and brown sugar in a small bowl. Brush the tops of each pastry with the egg and sprinkle the pecan topping on each. Bake in the 400 degree oven for 15 minutes or until golden brown.

Step Three: while your pastries are cooking, mix cream cheese, powdered sugar, vanilla and water in a small saucepan until the desired consistency is reached.
Drizzle over each pastry after they are removed from the oven.
And that is it. I told y’all it was simple. Now get to baking!
Thanks again for having me, Lindsay! I can’t wait for y’all to stop by my little blog and say hi! You can also follow me via the links below! xo-ginny

    OhMyGawd.

    A. How am I so far behind on your blog? (because Eva hijacks my phone, always, unless she’s sleeping)

    B. These need to get in my belly now. (and this girl’s photog skills are making me jealous!)

    C. Hope you’re having a great weekend, my friend!
