Orzo Pasta Recipe

One of my great friends is getting married May 2 and her bridal shower was last weekend. One of her requests was to bring a recipe to share to the shower. We all know that the best way to a mans heart is to cook him good food. SO she is thinking ahead. I decided to share my orzo pasta salad recipe, because this is MY hubby’s favorite dish. It was a huge hit. It makes for a wonderful side dish for a spring or summer BBQ. Oh and the best part is that it is SUPER easy! I am not even a huge pasta fan and I LOVE this dish! Here is my recipe for you all to enjoy. Let me know what you think!
The Ingredients

  • 1 box of orzo pasta (Barilla is a good brand) and cook according to box. Rinse pasta with cold water before adding ingredients.
  • 1 jar of juiliene sliced sun dried tomatoes in oil-use a fork to remove tomatoes because you don’t want the excess oil
  • 1 jar of kalamata olives sliced, pitted and drained
  • 1/2 c of chopped basil
  • 3 heads of belguin endive- (trader joe’s has a 3 pack with 2 white and 1 purple)- cut into mixture with cooking scissors
  • The Dressing consists of: 1/4 c balsamic vinegar, 5 tbsp olive oil, 2 cloves of garlic minced, 1/2 c freshly grated parmesan cheese
Mix all ingredients together and refrigerate. Serves 8-10 people.
